Goat Cheese appetizer recipe

  • 1 log of goat cheese (chevre`)
  • 2 Tbsp brown sugar
  • 1 Tbsp butter
  • ¾ cup whole walnuts
  • ⅓ cup fresh, chopped basil
  • ⅓ cup chopped dried cranberries
  1. All of these proportions are of the "eyeball it" variety. As long as you wind up with equal parts walnuts, basil and cranberries, you're pretty much good to go.
  2. To make the candied walnuts melt the butter and brown sugar in a skillet and stir the walnuts until well coated. Let cool and harden on wax paper.
  3. Chop and mix with basil and cranberries. Turn mixture onto wax paper and roll the goat cheese in the mixture, pressing the mixture into all sides. Roll up in the wax paper and chill until just before serving.
  4. Place it on a platter, serve with crackers, and be prepared to have an appetizer steal the show from the main course.
