What’s up doc? The best Carrot Cake ever!

My friend Jen in Pennsylvania is one of the best bakers ever. She shared her famous carrot cake recipe with me, and I now share it with you.

Jen’s Carrot Cake
Grease and flour 2 9″ round cake pans. Set aside.
Preheat to 350.

Beat together:
1 1/2 cups vegetable oil
1 3/4 cup white sugar
4 extra large eggs

Combine in separate bowl:
2 cups flour
1 T cinnamon
2 t baking soda
1 t salt

Add to mixer and combine.

Add 3 cups grated (in food processor) carrots (about 7) and beat til combined.

Don’t taste batter; it’s gross.

Pour evenly between both cake pans and bake 35-40 minutes.

Once they’re cool enough, remove cakes from pans. I find them easier to frost them if I freeze them, but you don’t have to. Trim cake layers if necessary, assemble cake, with frosting in bewteen the layers.

Icing:
Beat together:
1/4 cup soft butter
11 oz. cream cheese
3 1/2 cups powdered sugar
2 t vanilla

Honestly, even people who claim to hate carrot cake ask for second helping of this baby.
