Brownies with Chocolate-Caramel Glaze: A special moment dessert.

We had some friends over for dinner Saturday night for an easy BBQ.  (It wasn’t a last minute thing, but it wasn’t exactly on the books for weeks either.)    I realized that our friends Rick and Rose both had birthdays this week.  Not wanting to make this A Birthday Party, but still wanting to acknowledge their birthdays, I decided to make a yummy dessert and pop a couple of candles into it.

Yum!  I normally make these brownies with just a straight-up caramel glaze, but I decided to change it up a bit.  At the grocery store before our BBQ I was getting creamer for coffee.  I always get a regular half & half, but I often pick up a flavored creamer from International Delight as well.  They have changed their packaging a little bit, and it looks like they have added new flavors too.  (Check out International Delight’s new Coffee Creamer packaging and flavors on Facebook)

While checking things out, I noticed this one:

That’s right.  Hershey’s Chocolate Caramel creamer.  (Yes, please.)  I decided to alter my normal brownie recipe so I could use International Delight to add a bit of oomph to the caramel glaze.
It. Was. Awesome.  Here’s the recipe:

Brownies with Chocolate Caramel Glaze 

Brownie Ingredients and Directions: 
Mix: 4 eggs 
1 cup canola oil 
4 t. vanilla 
2 c sugar 
In separate bowl mix: 2/3 c. cocoa powder 
1 and 1/2 cup flour 
1/2 t. salt 
1/2 t. baking powder 
Blend dry ingredients into wet ingredients. Pour into a greased 13 x 9 pan. Bake in a preheated oven at 350 degrees for 25-28 minutes or until the sides begin to pull away from the pan.  Let cool completely. 
Chocolate Caramel Glaze Ingredients and Directions: 
1 cup sugar 
6 Tbsp butter 
3 Tbsp heavy cream 
1/3 cup International Delight Chocolate Caramel Creamer 
1/2 t to 1 tsp of sea salt 
Pour sugar in a medium sized pot on stove. Cook over medium heat until sugar begins to melt. As it begins melting and turning brown in color begin to whisk and whisk continuously until ALL sugar is melted. You can easily swirl the sugar in the pan as well to keep it moving and melting. Once the sugat is melted and liquified, add butter and whisk until butter is completely melted. Take off the heat and after about 20 seconds, slowly add the cream. The mixture will bubble and erupt. (Which is why you need a medium sized pot.) Keep whisking until the mixture is completely smooth.  If it begins seizing up, put it back on the hot burner to let the caramel melt a bit and keep whisking. Once it is smooth, pull it off the stove and let it cool. Add salt.  Start with 1/2 t. of sea salt and add more to your own taste.  

Allow caramel glaze to cool slightly, then pour over the brownies.  Refrigerate to help the caramel glaze set up.    
Serve with ice cream.  
(And coffee!)

They were a big hit (especially with the kids).  It was nice to be able to take a simple dessert and make it a bit more special, especially if it helped us take just a quick moment and celebrate the people in our lives.
I am the only coffee drinker in the house, so I usually enjoy my coffee with a bit of solitude and quiet each morning.  It was fun to have such a special moment with family and friends. 



I think we should celebrate the moment whenever possible, don’t you?
