One of the things I really love about summer-time is that lighter schedules make it easier to have impromptu get-togethers with friends. Do you ever run into a friend on the street, at the store, whatever and 5 minutes later you’re planning a BBQ or picnic dinner for that evening? Happens to me all the time and it’s nice to be able to whip up a cool, yummy dessert at a moment’s notice.
International Delight makes a delish Iced Coffee. While it’s great as is, I use it to help make a simple pudding taste a lot better.
This is really simple and takes just minutes.
Mocha-Caramel Graham Pudding
Ingredients:
1 large box chocolate fudge flavored instant pudding mix (5.9 oz)
2 cups Mocha flavored International Delight Iced Coffee
1 cup Half & Half
1/2 cup good caramel sauce
Graham crackers (crushed)
Whipped Cream
In a large bowl mix the International Delight Iced Coffee, the Half & Half and the pudding mix. Spoon into pretty glasses and top with a healthy tablespoon (or so) of the caramel sauce.
They set up in less than 5 minutes, but you can make ahead and chill in the refrigerator until just before serving.
To serve, spoon crushed graham crackers into the glass, then top with a swirl of whipped cream and finely crushed graham crackers.
Enjoy!

That sounds good but I haven’t seen the iced coffee product here in Canada. I might have to improvise.
Oh, yummy!
This sweet treat looks scrumptious! What is better than CHOCOLATE and caramel! I am making this for sure!
