Hi everyone, my name is Rosemary Molloy and I blog at An Italian in my Kitchen. I was born and raised in Toronto, Canada where I also met my husband of over 20 years, how times flies. A week after we were married I moved to a small town outside Rome, saying it was a big difference is such an understatement. I missed my family, friend, my job, my city, hockey, everything! But I carried on and I have come to consider my small part of Italy my second home. I was also lucky to have a wonderful mother-in-law who taught me a lot of her amazing recipes and of course I always keep my eyes and ears open to friends and other members of the family for some special dishes. So today I am sharing with you one of the best summer pasta dishes, Pasta Caprese. Which means a salad made with fresh mozzarella, tomatoes and fresh basil, but in this case we are substituting the salad with pasta.
I love fast, easy and yummy dishes. This dish comes together in about 15 minutes while the pasta is cooking, (remember always al dente) you can chop up your tomatoes and mozzarella, add a little olive oil, some fresh and fragrant basil leaves and my favourite Italian spice, oregano. Drain the pasta, immediately combine it with the Caprese mixture, the heat from the pasta will soften and slightly melt the mozzarella, making those wonderful Italian ingredients one of the most delicious pasta dishes I hope you taste this summer. Pasta Caprese
Ingredients
4 large tomatoes seeded and diced
1 large fresh mozzarella diced
4-5 fresh basil leaves chopped
4 tablespoons olive oil
2 pinches salt
pinch pepper
1/2 teaspoon oregano
3 1/2 cups short cooked pasta
Directions
In a large bowl mix together gently tomatoes, chopped mozzarella, basil, salt, pepper, oregano and olive oil. Add cooked drained pasta and toss together, serve immediately. Enjoy!
