I am a big fan of Tidy Mom. Cheryl’s style is inspirational and her recipes are always delicious and easy to follow… in fact, foolproof. Unless of course a fool like me decides to substitute an ingredient in one of her recipes. I discovered I didn’t have an ingredient and couldn’t bear the thought of returning to the mad-house of a grocery store. So I improvised. (Cooking is art, baking is chemistry. Do not monkey with chemistry.)
I spied Tidy Mom’s Egg Nog Truffles the other day and knew they would be fab, so I doubled the recipe off the bat. (With the wrong ingredients.) I had a delicious concoction that wouldn’t hold a truffle shape. So you know what I did? I turned that delicious mess into a frosting instead.
There was no way I wanted to waste that deliciousness, and these cookies were a serendipitous solution!
I used a boxed Snickerdoodle mix and simply turned my failed truffles into a perfect ganache frosting.
To make the frosting, go to Tidy Mom and double her Egg Nog Truffle recipe, but instead of using 1 tsp of Rum Extract, substitute 1 Tbsp of Rum.
Bake cookies as directed and then slather on a big dollop of frosting.
These cookies were amazing. I say were, because they were eaten up within a few hours.
By the way, I gave the Egg Nog Truffle recipe again, following the recipe to the letter, and they turned out beautifully. If you are looking for delicious recipes, Tidy Mom is always a great resource.
(And in the unlikely event you mess up a recipe, play around with it and see what you can make instead. Sometimes accidents are delicious.)
