I just realized I made these yummy Pork & Black Bean Rice Cakes a year ago and haven’t made them again since. What’s wrong with me!? These are full of spicy pork carnitas, roasted corn, black beans and tasty rice and are so easy to make!
This is an awesome way to use up leftovers and the recipe is so loosey-goosey that you can alter it anyway that you want to come up with lots of variations. Oh, and for this one, the Cilantro Sour Cream Sauce just makes the dish. Spicy, tangy and just plain yummy.
