Mexican inspired bunco dinner.

I am in a bunco group, and tonight is my turn to host the group.  Last year I did a whole week a where I shared several projects, as well as the dinner that I served.  It was Italian inspired.
This year?  Mexican food, baby!

Here’s what’s for dinner tonight:

 

Chips & Homemade Salsa
Poblano pepper Rajas with fresh roasted corn 
Chicken Quesadillas 
Carnitas & Avocado Quesadillas
Chipotle-Lime Coleslaw with roasted Pepitas
Cadillac Margarita Ice Cream

    Your menu looks amazing!

    Tonight's bunco night for me as well, but it's not my turn to host. Our group usually just does two or three appetizers, dessert and drinks. Blue Moon is the official beer of bunco and when I host, I usually make both a red and a white sangria.
