Is it just me, or are our appetites bigger when we are cooking over an open fire? We recently returned from our annual camping trip up near Lake Tahoe. Food that is cooked directly over an open campfire just seems to taste better, you know? So I thought I’d share a few of our favorite campfire recipes.
What do they say? A bad day fishing beats a great day at the office… This is one of our favorite ways to cook freshly caught fish.

What about a side dish? You can also easily bake skillet cornbread over an open fire as well. If you have a cast-iron skillet (and you should totally get one if you don’t already have one) you can make this easy and delicious cornbread.
And lastly, you can’t forget about dessert. Of course S’mores are the campfire staple when it comes to dessert (and roasted Starbursts are fantastic too) but one of our favorite things is to make Banana Boats.

Have you ever tried cooking the fish by laying them on a flat rock while the rock is lying on a bed of hot coals? The rock generates the heat from the coals and will cook the fish. You can cook some delicious squash by covering it with clay mud. Mix up clay soil with some water to make a mud. Cover the squash and place on hot coals. When the clay heats, it will dry, essentially becoming a clay oven and will cook the squash. Yum-yum!

I love cooking the fish filet by laying it over a large flat rock. It smells different.
