Tropical Mango Coconut Smoothie Recipe

Summer is coming and so are the tank tops, bathing suits and shorts that inevitably come along with it.  I’ve upped my exercise level, cut my calories, and am trying to get more probiotics, because in addition to wanting to look good, I’d like to feel good too.

Smoothies are a great way to add both protein and probiotics to your diet and I make them all the time.  My favorite at the moment?  This yummy Mango-Coconut Smoothie.

Before we get started, let’s chat about mangoes for a minute.  They are delicious, full of Vitamins C and A and a good source of potassium and magnesium, (which rhymes with “yum”).  However, even though they are one of the most popular fruits in the world, we Americans are a little unsure of how to peel and eat them.

Mangoes have a large flat stone in them and a thick skin, so it can be a messy endeavor to get to the sweet fruit.  The easiest way to peel a mango is like so: Slice down the flat side of the fruit, then down the other side.  It’s almost like you’re cutting it in thirds.

The middle piece will have the stone in it.  Set it aside while taking the 2 outer pieces and scoring them by carefully cutting through the mango flesh right up to the skin.  Create cut marks in the opposite direction.  You should be able to turn the mango inside out and then carefully cut out your mango cubes.  For the remaining middle piece, you can get that last little bit of fruit around the stone with a melon-ball tool.  You have to pull it across the fruit, rather than scoop like a melon, but it works great.  Now that you’ve cut up your mango, it’s smoothie time.

Mango Coconut Smoothie

  • 1 fresh mango
  • 1 ripe banana
  • 1 cup of ice
  • 2 cups coconut milk (I like Silk)

    Mmmm. I will take the easy way out and use frozen mangoes from Costco and skip the ice. No peeling or dicing.
    I have been drinking smoothies on my way to work in the morning but it occurs to me I am going to get wrinkles around my mouth from trying to suck the delicious smoothies up the straw. Vanity may win out over yummy.

    I’m having a bit of trouble telling from the list of ingredients on the website. Is the shake mix vegan? I’m not seeing dairy but maybe you’ll know scone you use it! 🙂
